Cooking instructions
* Step 1
First, take a deep pan, preferred non-stick so that sago will not stick to base. Then heat the ghee in it. Add a pinch of cardamom powder.
* Step 2
Then add the sago and keep stirring till it is coated with ghee. Keep low flame. Cook for 2 minutes. Then add the milk and stir well. Then cook this mixture for next 15 minutes on low flame.
* Step 3
Keep a spoon inserted in the mixture so it will not over boil. Side by side, heat a saucepan. Add orange juice and sugar and mix well. Stir and cook till you get a thick syrup. Keep aside Add saffron milk, dates to the kheer and mix well. Dates will soften with the heat of the kheer mixture.
* Step 4
Then check if sago is cooked by mashing some with spoon. If it gets mashed, it is cooked. When the milk has reduced in quantity, add the orange syrup, milk powder mixed in a little milk and stir well. Cook for further 5 minutes on low till the kheer is thick. Remove from stove and cool to room temperature.
* Step 5
Then refrigerate till serving. It will thicken similar to a pudding. Garnish with choice of fruits or arrange in layers of fruits and kheer, serve and enjoy.
