On the occasion of Ekadashi in the month of Karthik month, an all day fast is kept all over Maharashtra. A favourite fasting recipe is Ratalyache Thalipeeth or sweet potato Pancakes . It also has amaranth flour and peanut powder fir extra taste. It is a healthy, nutritious recipe which gives, energy, carbs, proteins and vitamins B, C and iron in the fasting days. Easy to prepare and very delicious too! Enjoy.

Food ration :
3 to 4 servings
Cooking time :
30 minutes.
Cooking instructions
* Step 1
Peel the boiled sweet potatoes and grate them.
* Step 2
In a deep and large bowl, mix all the ingredients except ghee. Rub well with fingers to coat the flour with spices.
* Step 3
Then mix to a firm dough by using hot water. Cover the dough and keep for 10 minutes.
* Step 4
Then heat a tawa/ flat pan(non-stick) and grease it with a little ghee applied on paper towel. (Being a Dietician, I used very little, but you can add more).
* Step 5
Then wet your fingers, take a dought ball and place it on tawa. Press with fingers to make a round disc and make a hole in center.
* Step 6
Alternatively, you can roll it like a thick paratha too.
* Step 7
Then place it on hot tawa and roast it from both side till crisp. Apply a little ghee on top into the cetre indentation from both sides and roast again for 1/2 a minute till brown spots appear.
* Step 8
Then take out in a plate. Serve very hot with curd and lemon pickle. Enjoy the yummylicious Ratalyache Thalipeeth.
