Garlic Chicken with Black Olives
An easy one pot meal! Full of nutrients from the brightly coloured vegetables. I used capsicums and cucumbers. The olives came in a small packet and were already seasoned with sea salt. Mixed in at the very end! An easy #keto meal!
Cooking instructions
* Step 1
Heat oil in pan. Add in garlic and minced ginger, stir fry till fragrant.
* Step 2
Add in chicken fillets (cut into bite size pieces). Cook till brown. Then add in mirin, Chinese cooking wine and white pepper. Stir to mix. Remove chicken when mixture starts to boil.
* Step 3
Add in vegetables in the same pan. Stir-fry for 4-5 minutes or till desired consistency. Then add in olives. Add in chicken at the end, mix well and enjoy!
