The easy recipe of lauki halwa prepared without mawa and milk. I used fresh malaiThis lauki halwa recipe does not need any addition of khoya or mawa. In the process of cooking lauki with malai the malai begins to evaporate and reduce .
Cooking instructions
* Step 1
Take bottle gourd (lauki) cut into 3-4 pieces Peel them and grated it.sqeeze to reduce excess water.
* Step 2
Take a heavy bottom kadhai add ghee and grated lauki roast for 3-4 minutes on high flame then cover and cook on medium flame until it turn soft.stir occasionally. It takes about 10 minutes. When it turns soft add malai.mix well.
* Step 3
Cook it with malai for 5-6 minutes.when malai melt and reduce add sugar mix it and cooked until sugar dissolved add cardamom powder. Mix well.
* Step 4
Cook it on high flame keep stirring and cooked till the halwa will gradually thicken and you will see some ghee being released from the sides. There should not be any liquid in the halwa.switch off the flame.garnish with chopped almonds and silver paper and serve.
