California Farm Organic Ginger Ale
My boy has been making a gallon of this starting in 2004, around the Holidays, for everybody to enjoy. He makes it without hops, I add hops to mine. Here are both recipes. “ When you burp, mine tastes like ginger ale and yours like beer, Dad” He figured 30 cents a bottle in 2004, I figure $1 per bottle now, if you have to buy the hops, otherwise 90 cents. We use the gingerpeels as well, they have more nutrients than the flesh.

Cooking time :
Ferment 4 days after one hour boil.
Cooking instructions
* Step 1
Combine water, honey, (and hops, optional) in large stock pot. Add juice of two large lemons, bring to boil while stirring. Scrub and grate ginger, add to pot, simmer 30 minutes.
Cool five hours, add 1/2 tsp yeast, stir, rest 24 hours at room temperature.
* Step 2
Pour in bottles throught sieve, let stand another 24 hours at room temperature, then serve, or put in dark pantry, unless you use dark green glass bottles. Serve cold. Enjoy!
