Cooking instructions

* Step 1

Soak soya chunks in boiling water for 1/2 hr. Strain it, transfer it to normal water for 1/2 hr. Strain it, keep aside.

Take a pressure cooker, add soya chunks, bari elaichi, laung, dalchini, choti elaichi & kali mirch. In goes chana dal, dry red chilli & salt.

Top up with water, place the lid, give 6 whistles on high flame. Lower the flame, cook it for 5 minutes. Turn off the flame.

Allow it to depressurise naturally. Open the lid after 5 minutes. Take out in a bowl, leave aside the water if at all it is left. Allow it to cool down.

Grind it coarsely, take out in a bowl, keep aside.

Lightly dry roast the besan, add in the batter, mix it well.

Take small portions of the batter, roll it, give a shape of your choice.I have kept it round.

Take a wok, add oil, heat it. Moderate the flame.

Deep fry the cutlets, 2 at a time, until brown. Take out in a bowl or dish.

Plate it, serve it with dhania chutney...
