Mangalore Buns with Vegetable Sagu

#toc3 MANGALORE BUNS, as the name suggests is one of the most popular breakfast recipe of Mangalore.These puffed poori's are served with vegetable sagu.The taste of these puffed pooris are similar to a banana cake or a banana bread but has a totally different texture with different preparation steps.

Ingredient

1/4 cup

curd

1/2 tsp

cumin seeds

1/2 tsp

salt

1/4 cup

green peas

1/2 cup

water

2 tbsp

oil

Cooking instructions

* Step 1

Peel the bananas and put in a bowl.Mash them into a smooth paste.In the same bowl add the curd, cumin seeds,baking soda,salt and mix well.Now in the same bowl add the maida.Combine well and knead into a soft dough.Grease the dough with 1tsp oil.Cover and let it rest for 8 hours or overnight until double in size.

* Step 2

Once the dough is double in size, knead for 5 minutes and make small balls from the dough.Roll out each ball into slightly thick rounds.Deep fry in hot oil and flip both sides until dark golden brown in colour.

* Step 3

Serve hot with vegetable sagu.

* Step 4

To make the vegetable sagu, put oil in pan.Add the cumin seeds and mustard seeds.When it splutters,add the green chillies, curry leaves and diced onions and cook for 5 minutes. Now add the diced carrots and peas and cook for 10 more minutes.Add salt and turmeric powder.

* Step 5

Now mix gram flour in water and pour it in the mixture.

* Step 6

Now add the boiled and mashed potatoes and mix well.Add little more water.Cover and cook for 10 more minutes.Garnish with chopped coriander leaves and Serve.
