Egg & Prosciutto Quick Lunch
Being busy needn’t preclude a nice lunch! This takes very few minutes but is tasty and nutritious, almost sumptuous! For maximum enjoyment, use the best ingredients you have available: increase or reduce quantities according to how self-indulgent you feel.

Cooking instructions
* Step 1
Hard boil the eggs in salted water. I bring them to the boil from cold, turn off the heat and cover. After 4-5 minutes they’ll be ready. Cool under the cold water tap. Peel and slice.
* Step 2
Meanwhile, toast the bread and butter it.
* Step 3
Lay the prosciutto on the toast and then the sliced eggs.
* Step 4
Finally, sprinkle on the capers.
