Okra_with_meat_and_sauce

This Okra Stew is a hearty Lebanese style recipe with robust flavors of stewed tomatoes, garlic and pomegranate molasses - the whole family will enjoy!

Cooking instructions

* Step 1

Take off okra dry head(top)

* Step 2

Wash it with running water

* Step 3

Put in a strainer until it is completely dry

* Step 4

Heat oil,and fry okra until they are golden brown

* Step 5

Finely smash garlic

* Step 6

Wash coriander and finely chop

* Step 7

In the stew pot,add ghee,then meat stir a little  untill meat turns brown in  color.

* Step 8

Pour water over the meat and boil untill it is cooked.

* Step 9

In a deep pan add ghee,garlic and coriander,fry the mixture.

* Step 10

Peel tomatoes, remove the seeds. Finely dice the tomatoes

* Step 11

When meat is cooked add tomato puree,salt,  pomegranate molasses,and fried garlic mixture, leaving the mixture to boil and condense with stirring from time to time.

* Step 12

Add okra and tomatoes to the sauce,and slowly mix

* Step 13

Shake the stew pot, without stiring,so as okra doesn’t damaged during cooking.

* Step 14

Cook for 30 minutes,on low heat. Pure okra in a deep serving bowl, serve hot with rice (vermicelli rice)

* Step 15

Chef's Tip: Do not add any spices to this recipe, so as the okra brings out the delicious garlic and coriander taste
