Luni means namkin, khaja is prepared in the kitchen of the Lord Jagannath Temple of Puri daily and being served as Prasad.It's one of my favourite snacks. I have made this with Flour ( Maida), rice flour, kala jeera ( Black Cumin) and oil. This is best taken with piping hot tea/coffee during afternoon/evening. Easy to prepare and good to taste!

Cooking instructions
* Step 1
2tbs oil and 3 tbsp rice flour mix and make a thick paste.
* Step 2
In a large mixing bowl add flour,oil,salt and kalonji rub it in your palm,then slowly add water to make a stiff dough.
* Step 3
Knead it for 10 minutes and keep aside for 15 minutes. Again knead until it is smooth.
* Step 4
Now roll the dough into circular shape with the same thickness as that of a chapati.
* Step 5
Then spread the oil+rice flour paste evenly over the chapati, again spread a roti on top, again spread oil mixture, continue the same process four times, then roll the chapati tightly from one side to give it a rope like shape.
* Step 6
Then cut into one inch size pieces, roll each piece again to make about three inch long khaja.
* Step 7
Now heat oil in a frying pan and deep fry the khaja on medium to low flame till it becomes light golden in colour.
* Step 8
The khaja will become crisper and harder as they cool.Serve after they become cold,.Store it in an airtight container to serve with tea or coffee as snacks.
