Quick Rabdi Lauki kheer

#navratri2019 Post1 Lauki kheer though very common and is eaten during Navratri,s, I made it for the first time. I have used fresh malai and milk powder to get the taste of Rabadi.And made it in pressure cooker .

Cooking instructions

* Step 1

In a pan heat ghee add squeezed grated Lauki,saute a minute. Off the flame.

* Step 2

In a pressure cooker bring to a boil milk and let it simmer for 5 minutes.To it add sauted Lauki, sugar,1/2 of the fresh malai and close the cooker. After 1 whistle lower the flame and let it cook for 5 minutes.

* Step 3

When pressure is released, open the cooker. Lauki must be cooked. Add little more milk, remaining fresh malai and milk powder, stirring regularly that no lumps are formed.

* Step 4

Cook till desired consistency required for the kheer.Add cardmom powder,raisins and almonds. Rabadi LaukiKheer is ready to serve. Garnish with chopped almonds.

Serve hot or cold.
