Sumac stew
Tas kebab is a kind of meat stew in Iran. Different cities and town has their own recipes. It may be made with lamb/veal or mutton.
This tas kebab is Azerbaijani version of tas kebab. It is Very tasty , light and full of flavor stew. Star of this dish is sumac, one of spices that is very popular in Middle East cuisine, specially in Iran, we use it for topping the rice with kebab, or making salad or stews like this one :) . Sumac with beautiful purple color and sour/lemony taste, give very unique flavor to the dish.
Cooking instructions
* Step 1
Heat the oil in a pan, and fry diced meat until its' color change into brown.
* Step 2
In a separate pan, saute turmeric, cinnamon and pepper for 1 minute.
* Step 3
Pour 600 ml (or more) of cold water in a pot and add fried meat and spices. Leave to cook the meat until tender and soft.Once meat is ready add the salt.
* Step 4
Fry the onions and potatoes. Add them to the cooked meat. Finally add sumac powder as well. Gently mix all ingredients together. Taste the stew and if needs more pepper or salt, season it.
* Step 5

Allow to cook over a low heat for 20 minutes. Serve it with rice.
