California Farm Dried Fava Beans in Cream Sauce
Dried Fava beans are delicious when soaked and steamed, as a vegetable with dinner, in a cream sauce. Dried favabeans keep their fresh taste for ten years when dried, and even sprout again after ten years when planted. The green fava beans are ripe now, 75 days after planting, the beans then dry to deep purple in the pod if left on the plant, and the pods burst and beans shake out easily after another 30 days.

2 Hour soak, 1 hour steam
Cooking instructions
* Step 1
Peel beans from pods. Stir around in olive oil till covered. Simmer covered with water till soft. Beans will turn black.
* Step 2
Bring coconut milk with nutmeg in saucepan to boil. Mix Tbs corn starch with 3Tbs cold water, add to coconut milk when boiling, stir to thicken into a creamy sauce. Pour over cooked beans. Serve.
