#greenveg Mathri is a traditional North Indian style crispy cracker generally prepared during festival. To be honest, kids aren't much fond of green leafy vegetables. But they are much essential part of the diet. Spinach is a super food with an array of health benefits.

Ingredient

1 teaspoon

carom seeds

1 teaspoon

ghee

to taste

Salt

1/2 teaspoon

baking soda

as required

Oil for frying

Cooking instructions

* Step 1

Take all purpose flour, gram flour and salt and carom seeds in a bowl.Mix all the ingredients.Add spinach puree and mix it and knead a tight dough.Add little water if required.

* Step 2

Add 1 teaspoon ghee and mix it.Cover it with muslin cloth and keep aside for 15 to 20 minutes.Knead the dough again for a minute and divide it into 30 equal portions.

* Step 3

Place each portion on rolling board and slightly press it using your palm.Roll it out round flat surface having 1/2 inch thickness and approx 2 to 3 inches diameter using rolling pin.

* Step 4

Make 8 to 10 pricks on it using fork for prevent puffing during deep frying. Heat oil in a heavy based frying pan over medium flame. When oil is hot, add 4-5 rolled circles at a time into hot oil and reduce flame to low.Deep fry them over low flame.

* Step 5

Deep fry until another side turns golden brown and crisp. Remove on kitchen towel.Cool them at room temperature and store spinach cracker in an airtight container. consume them within 10 - 15 days.
