Welsh rarebit with leeks
Classic Welsh rarebit with a seasonal twist. Adding softened leeks makes this snack feel more substantial! Gorgeous veg from Reg The Veg in Clifton, Bristol

Cooking instructions
* Step 1
Halve and slice the leek and place in a large frying pan over a low-medium with a drizzle of oil.
* Step 2
Cook until softened and sweet, stirring occasionally
* Step 3
Next make a roux. Place the butter in a small saucepan over and medium heat, slow to melt then add the flour, stir to combine and cook for 1-2 mins
* Step 4
Next add the ale, stir to combine, followed by the cheese
* Step 5
Allow the cheese to melt, stirring often then add the mustard and Worcestershire sauce and season.
* Step 6
Lightly toast the bread, then top with the leeks, and spread over the cheese mixture.
* Step 7
Place under a hot grill until bubbling and golden
