Pangrattato
Pangrattato is an Italian dish which literally means 'grated bread', it is also known as Poor Man’s Parmesan and was originally created to add flavour to pasta dishes because Parmesan was too expensive for some households. Full of texture and flavour Pangrattato offers much more value than that of a substitute ingredient these days.

Cooking instructions
* Step 1
Blitz the bread in a food processor to make breadcrumbs
* Step 2
Add a glug of olive oil to a large frying pan, place over a medium heat, add the anchovies and allow them to melt into the oil.
* Step 3
Add the garlic and stir for 30 seconds, then add the breadcrumbs and fry stirring occasionally for 5-10 minutes until the bread is crispy. Add a little more oil if necessary.
* Step 4
Stir through the lemon zest and chilli flakes, season and cook for 1 more minute then remove from the heat and serve
