Celeriac salad with tahini, dates + almonds
A lovely fresh salad for this time of year.
Ingredient

Cooking instructions
* Step 1
Peel the celeriac with a vegetable peeler. Use a sharp knife to trip off the knobbly bits.
* Step 2
Slice it into matchsticks with a sharp knife. Place the flat side of the celeriac onto a board, then very finely slice it into half moons.
* Step 3
Place into a large bowl and squeeze over the lemon juice so it doesn't brown.
* Step 4
Pit the dates, then rehydrate by placing in a bowl and cover with boiling water for 10 mins.
* Step 5
Add the oil and vinegar and tahini sauce, then toss through. Mix through the rocket. Season well with salt and black pepper.
* Step 6
Drain and slice the dates.
* Step 7
Toast the almonds in a dry frying pan over a medium heat, stirring often so it doesn't burn
* Step 8
Add it all to the bowl, toss together, then serve.
