Vietnamese chicken marinade
Quick, easy and delicious - this super simple marinade takes chicken thighs to the next level. Pop them on a grill and enjoy as you like. I added them to Vietnamese style banh xeo, but they’d be great with many other Asian style dishes too.

1 hr (min) - including marinading time
Cooking instructions
* Step 1
Put the chicken thighs in a bowl or bag and add all the marinade ingredients. Mix everything together and leave for at least 30 minutes to infuse.
* Step 2
When ready to cook, bring the bbq (I used gas) up to 200 degrees c. Add the chicken thighs, cook on one side for 7 minutes, then flip and cook on the other side. Remove from the heat and allow to rest before serving.
* Step 3
No pressure to use a bbq. You could use a grill pan too. Just bring the pan up to a medium heat and do the same. Just double check the chicken is cooked before eating as temperatures / cooking time may vary between bbq and pan.
* Step 4
In the end I used my chicken as part of a Vietnamese style banh xeo.
