Sweet Potato and Prawn Cakes

Sweet Potato and Prawn Cakes

Served with a sweet chilli dip.

Ingredient

spring onion

3 tbsp

soy sauce

3 tbsp

olive oil

Cooking instructions

* Step 1

Peel and chop the sweet potato. Add to boil. Don't let them overcook or they may turn out soggy.

Chop the spring onions.

Chop the prawns.

Add the soy sauce, prawns and spring onions to a bowl.

Deseed and chop the chilli. Add to the bowl and stir. Set aside till the sweet potatoes are cooked.

Add the flour and stir.

Drain the sweet potatoes and roughly mash with a fork in the colander. Getting out all excess water.

Add the sweet potato and stir. Pop in the fridge for 20 minutes to firm up.

Heat oil in a pan take a chunk of mixture, add to the pan, flatten with a spoon. Cook on both sides. Repeat until done. Keeping some warm in an oven if required.

Serve with sweet chilli dip.
