Lime dressed Chicken Salad with Croutons

Lime dressed Chicken Salad with Croutons

I made the Recipe up - based on my knowledge of seeing TV Cookery Shows over the years. I made double the amount of Croutons as shown in my Photo - but here I will give the Recipe for making Croutons for One Person

Cooking instructions

* Step 1

Preheat the oven to Gas Mark 5. Heat 2 tablespoons of Vegetable Oil in a large frying pan or wok. Add lots of clean cold tap water too a large Mixing Bowl and water wash the raw Chicken Breasts and then place both Breasts into the hot Vegetable Oil and then fry on a high hob heat for One minute each side and then place on a Baking Tray and bake the Chicken Breasts for 25 - 30 minutes. Allow to cool

* Step 2

Make the Croutons now. So add One tablespoon of Vegetable Oil too a non-stick Wok or non-stick Frying Pan and then add the 3 tablespoons of Olive Oil. Rip the bread slices with your Fingers and coat the small pieces of bread with the Cooking Oil and gently shallow fry on the lowest hob heat and continually turn - with a heat proof Spatula. Will take quite a long time too crisp up and then allow too cool in the Wok etc. with the Wok Lid on

* Step 3

Place a Lime in a small Dessert Bowl and then cut through the middle of the Lime and then convert the Lime juice into a large mixing bowl - squeeze the other Lime juice into the large mixing bowl as well (so 2 in all) and then add the 2 tablespoon measurements of Olive Oil too the Lime juice and then season with the Sea Salt - coat the dressing all around the mixing bowl

* Step 4

Water wash the Lettuce leaves in a large mixing bowl. Chop up the cold cooked Chicken Breasts and then place into the Lime dressing first (within the large mixing bowl) and then add the ripped up Iceberg Lettuce leaves - quarter into 4 - all 3 Salad Tomatoes and then add them - and then wash the outer skin of the Cucumber and then slice into small rounds and then add them

* Step 5

Serve with the Croutons on the side. Combine salad with One of your Hands and eat with the Fingers of your Hands. Enjoy
