Banana Muffins
Foolproof recipe I got from my friends Sarah and Noku. This recipe yields 8 medium muffins.
Cooking instructions
* Step 1
Preheat oven to 230 degrees. Mix (I blended) banana, egg and vanilla essence. Add butter and sugar and mix. Add bicarbonate of soda and mix.
* Step 2
Fold in flour but don’t over mix, just fold in. Using a ladle scoop mixture into muffin tray.
* Step 3
Bake at 230 degrees for 5 minutes. Reduce to 180 degrees and bake for further 10 minutes till done and a tester comes out clean.
