Chocolate beetroot cake

Cooking instructions
* Step 2
Lightly butter square cake or 25cm round pan
* Step 3
Sift Cocoa powder flour and baking powder into large bowl
* Step 4
Stir in sugar and set aside
* Step 5
Puree cooked beetroot in food processor
* Step 6
Add eggs one at a time mixing each time.
* Step 7
Add vanilla and oil and mix until smooth.
* Step 8
Make a well in centre of dry ingredients and stir in beetroot mixture and lightly mix.
* Step 9
Pour into pan and bake for 50-60 mins or until a skewer comes out clean
* Step 10
If cake begins to brown to quick cover with foil after 30 mins
* Step 11
It won't rise and may crack. Remove from oven and cool for 15 mins in pan and remove to wire rack. Dust with icing sugar to serve
