Baked chicken with Peppers aubergines and mushrooms

Cooking instructions
* Step 1
Place dish into oven and hear to 220c/425f/gas mark 7
* Step 2
Toss chicken with olive oil & garlic
* Step 3
Place chicken breast side down in roasting dish and cook for 10 mins. Turn chicken over and add Peppers aubergine and onion. Sprinkle oil over. Bake 25 mins
* Step 4
Add mushrooms and peas and toss with other vegetables.drizzle with oil and bake for 10 mins until tender.
* Step 5
Meanwhile mix pesto ingredients
* Step 6
Serve and drizzle pesto over the veg.
