Slow Cooker Lemon Garlic Chicken
Cooking instructions
* Step 1
Remove giblets. Pat chicken dry.
* Step 2
Mince 3 cloves garlic. Mix with thyme, olive oil & salt.
* Step 3
Gently work fingers under chicken skin over breasts. Rub with mixture. Also rub over drumsticks & thighs.
* Step 4
Place chicken in slow cooker. Juice 1 lemon and whisk juice with soy sauce & stock. Pour over chicken.
* Step 5
Stuff rinds of juiced lemon + some unpeeled garlic cloves into chicken cavity.
* Step 6
Add remaining lemon (quartered) and all remaining garlic cloves around chicken.
* Step 7
Cook on HIGH for 4 hours.
