Pumpkin Stir Fry

Pumpkin stir fry is a simple, easy and low-calorie recipe. Each serving of this pumpkin, spinach, and mushroom mixture is a good source of vitamin c, vitamin d, vitamin B2, and iron. It is a rich source of vitamin a and k. It is a main coarse dish that can be brilliant for the cold evening in winters.

Cooking instructions

* Step 1

Heat some oil in a frying pan.

* Step 2

Add cumin seeds, ginger, garlic and cook till light brown color.

* Step 3

Add onion, tomatoes and cook for some minutes till a gravy like consistency is reached.

* Step 4

Add Mushroom, pumpkin and spinach and cook till soften.

* Step 5

Serve hot with rice or roti.
