Rhododendron Chutney
The recipe is given by Mrs. Sonia Minhas, Agriculture Development Officer of Directorate of Agriculture, Hamirpur. This chutney is prepared from the edible flowers of Rhododendron, super healthy and rich in fiber, calcium, iron with medicinal value. This is a rare preparation and made only in Himachali homes by mashing the petals of rhododendron with local spices. Its flavor is very refreshing and it can go very well as a side dish with chapattis, pranthas and rice.
Harvesting season: December to March.

Cooking instructions
* Step 1
In a food processor add flower petals, mint leaves, onion, green chilies and yogurt and jaggery.
* Step 2
To this mixture add requisite sugar or jaggery.
* Step 3
Add salt and blend to make a coarse mixture (take care not to make a fine paste, keep the chutney course).
* Step 4
Add lemon squeeze to the chutney and serve.
