Udon Carbonara
Italian Pasta are suitable for Japanese flavoured noodle dishes. Japanese Noodles are also suitable for many Italian flavoured pasta dishes. I think Udon Noodles, which are thick and rubbery, are very good with creamy sauces. Today I cooked ‘Spaghetti Carbonara’ replacing Spaghetti with Udon.
Cooking instructions
* Step 1
Lightly beat the Egg in a bowl with the grated Cheese, add some freshly ground Black Pepper.
* Step 2
Heat Cooked Udon Noodles until hot and soft, then drain.
* Step 3
Heat Olive Oil in a frying pan and cook Pancetta OR Bacon until crispy. Remove excess Oil using paper towel. Add drained Cooked Udon Noodles, stir-fry and lightly season with Salt. Remove from heat, and add the Egg mixture and stir until softly cooked.
* Step 4
Sprinkle with finely chopped Parsley and extra Pepper, and enjoy.
