Eggnog Ice-Cream
If you ever have Eggnog leftover after Christmas, freeze it in ice trays. The more alcohol is contained in the Eggnog, the softer it would freeze. The use a food processor to make it into smooth ice-cream. If you want to make Eggnog from scratch to make this ice-cream, find my ‘Eggnog’ recipe.
Cooking instructions
* Step 1
If the eggnog is not so sweet, you may wish to add 1-2 tablespoons Caster Sugar. Mix well until sugar dissolves well. Freeze the eggnog in ice trays.
* Step 2
Place frozen eggnog cubes in the food processor. It might be difficult to take the cubes out because frozen eggnog is soft and sticky.
* Step 3
Pulse until coarsely chopped. Then start processing, gradually pour 1-2 tablespoons Cream (*optional) through the feed tube, and process until smooth.
* Step 4
Place in the freezer to firm up before serve.
