Savory healthy porridge oats

Similar to risotto but uses porridge oats. Inexpensive, filling and super tasty. Use your favourite veggies.

Cooking instructions
* Step 1
Mix stock cube and boiled water. Add two tbsp to pan with slice spring onion, garlic, ginger, tumeric and apple cider vinegar. Cook for 1 minute.
* Step 2
Add grated carrot, thinly sliced pepper, thinly sliced courgette, and remaining stock.
* Step 3
Add oats and stir. Bring to the boil. Turn onto a low hear. Add rainbow shard (if uding), then simmer on a low hear until the oats have absorbed most of the liquid.
* Step 4
Turn off heat. Stir in fresh herbs and season with salt and pepper.
