Veggie toad-in-the-hole
Super simple way to use up veggies.
Cooking instructions
* Step 1
Add oil and roughly chopped veggies to pan and cook until slightly softened. Use whatever veg you prefer.
* Step 2
Pour a little oil into the casserole dish, spread the oil over the base and sides and put into an oven at 240C for a few minutes until sizzling hot.
* Step 3
In the meantime, mix together flour, salt, milk and eggs to form a smooth batter. Set aside.
* Step 4
Carefully remove dish from oven and spread veg evenly across the dish.
* Step 5
Pour over batter. Place into a hot oven until puffed up and golden. Serve immediately.
