Goat curry ๐Ÿ ๐Ÿ›

Unusually I found goat in the supermarket and have never cooked with it before so I thought Iโ€™d give it a try with some Jamaican flavours

Cooking instructions

* Step 1

Finely slice the ginger, garlic and chilli.

* Step 2

Slice the onions, pepper and sweet potato

* Step 3

In a hot pan add some oil, cumin seeds, garlic and ginger

Stir in and brown the meat

* Step 5

Stir in the peppers, onions, chilli and sweet potatoes and cook for 5 mins until soft

* Step 6

Deglaze the pan with the vinegar then add the stock, tomatoes and tomato paste. Add the bay leaf and thyme leaves. Reduce the heat and slow cook with the lid on for minimum 1hr, or until the meat is โ€œfall apartโ€ soft

Stir in the yogurt and remove the bay leaf

Serve topped with yogurt and coriander. Enjoy ๐Ÿ˜Š
