Egg, mushroom & halloumi “breakfast muffins”
We had some really nice mushrooms and halloumi in the kitchen but wanted to be a bit more inventive than an omelet
Ingredient

Cooking time :

Cooking instructions
* Step 2
Slice the mushrooms and tomatoes
* Step 3
Place in a bowl with grated halloumi, mixed herbs, salt and pepper
* Step 5
Line a muffin tray with oil
* Step 6
Place the mixture in a muffin tray and place in the oven for 15-20mins at 200c
* Step 7
Top with avocado and voila!
