Linguine puttanesca ๐Ÿ

This is one our favourites but we havenโ€™t had it for a while so I thought Iโ€™d post to Cookpad for a reminder. Fun fact: the direct translation is โ€˜tartโ€™s pastaโ€™

Cooking instructions

* Step 1

Boil the pasta until al dente. Donโ€™t forget to salt the water and wait for the water to boil before adding the pasta.

Finely chop the peppers, onion, chilli, garlic and basil stems (keep the leaves for later)

In a hot pan โ€œmeltโ€ the anchovies and then add the chopped vegetables

* Step 4

Once softened add the balsamic vinegar and reduce. This adds a sweet sour tang to the sauce ๐Ÿ˜‰

* Step 5

Add the tomatoes, mixed herbs and season with salt and pepper. Reduce.

Chop the olives and basil leaves and stir in

Mix the pasta into the sauce (not the other way round) and add a dash of water from the pasta. Serve and enjoy ๐Ÿ˜Š ๐Ÿ
