Daktyla - Ladies' fingers

Ladies' fingers or daktyla is a Cypriot perfect sweet that accompanies coffee (and not only) amazingly. In Cyprus we offer it on the buffet in christenings and weddings. It is made of dough filled with almonds and it is very easy to make!

Cooking instructions

* Step 1

Grind the almonds (using a pestle and mortar).

* Step 2

Add the sugar and the cinnamon.

* Step 3

Mix the oil and the flour in a bowl (using your hands). Add the water little by little and mix until you have a homogenous dough.

* Step 4

If you have a pasta machine, then roll out long and narrow strips, of about 5-7 cm width. If you don't, roll them out using a rolling pin.

* Step 5

Using a large spoon place a little of the filling at one end of the strip of filo (the narrow end). Τhen repeat for the length of the filo sheet leaving a 3 cm space between spoonfuls.

* Step 6

Roll the whole filo at its length into a cylinder.

* Step 7

Cut in the spaces that you have left without any filling and press the ends with a fork to seal.

* Step 8

Fry in piping hot oil until golden brown (about 5-6 minutes).

* Step 9

When you are through frying, let them all cool.

* Step 10

Place all the ingredients for the syrup in a pot and boil for about 5 minutes.

* Step 11

Dip the fingers, a few at a time, in the syrup and let them soak for 1-2 minutes.

* Step 12

Sprinkle with almonds and serve in a platter.
