Watermelon spoon sweet

The way they make it in Cyprus, crunchy and very tasty.

Cooking instructions

* Step 1

Peel and cut the watermelon rinds into square pieces.

* Step 2

Place them all into a bowl that you have added the water with the pickling lime and leave them for 2 hours, stirring from time to time.

* Step 3

Remove them, wash thoroughly and boil them in a pot with plenty of water. When they are tender (not overboiled) place them in cold water with the juice of one lemon and set them aside for 15 minutes.

* Step 4

Place the sugar in another pot together with the 2 cups of water and add the watermelon pieces together with 1 tbsp lemon juice over strong heat.

* Step 5

When they have boiled for 1 minute remove from heat and set them aside till the next day.

* Step 6

Place the pot back over heat, add vanilla and boil. The sweet is ready when the syrup has thickened.

* Step 7

When it cools store in sterilized glass jars.
