Traditional bourekia from Samos

A traditional recipe with yellow pumpkin.

Cooking instructions

* Step 1

Peel and cut the pumpkin in cubes and boil it in water.

* Step 2

When it is well cooked, add salt and empty it in a strainer to drain slowly on its own (better to leave it overnight).

* Step 3

Knead the dough and roll it out with a rolling pin.

* Step 4

Cut strips of about 2-3 cm width and 20 cm length.

* Step 5

Prepare the mixture. Mash the pumpkin with a fork. Sauté the onions lightly and add them to the pumpkin together with the sugar, oil and cheese.

* Step 6

Stuff the strips and wrap them, fry them in olive oil and place them in a strainer so that the oil drains out.
