Hohlioi Boubouristoi (snails in the skillet) 2

This is a traditional Cretan recipe.

Ingredient

Food ration :

1 kg

snails

1 cup

vinegar

1 cup

oil

Cooking instructions

* Step 1

Clean the snails at the front. ATTENTIONDon't wash or boil them.

* Step 2

Put enough salt in the skillet to fully cover it.

* Step 3

Place the snails in, open side down. Let them fry for 2 minutes to take on the salt.

* Step 4

Add the oil and rosemary and leave for 5 more minutes.

* Step 5

Deglaze with vinegar and stir the snails.

* Step 6

Serve hot.
