Irvixen's Blueberry Dijon Chicken

Tired of the same old chicken fare? Although my family approached this dish with caution and curled lips, they ask for it regularly now.

Cooking instructions

* Step 1

Sprinkle chicken w salt/pepper. Place in large pan in hot olive oil. Cook 6-8 minutes on each side. Remove from pan and tent loosely with foil to keep warm.

* Step 2

Mix remaining ingredients and add to hot pan. Bring to boil, lower heat and simmer 15 to 20 minutes or until thick, stirring occasionally.

* Step 3

Place chicken back in pan, turn to coat. Serve chicken with sauce and jasmine rice on the side.
