Braised red cabbage and apple
This is winter comfort food and great with a casserole like beef in beer. I tend to make both at the same time to make the best use of the oven. Reheats really well and good at room temperature too.
Cooking instructions
* Step 1
Prepare the red cabbage (remove tough outer leaves and core and shred /slice). Chop apples and onion and gather the other ingredients.
* Step 2
In a casserole dish, layer cabbage, apple and onion and add a little garlic, nutmeg, salt /pepper and sugar to apple/onion layer
* Step 3
Finish with cabbage, then add the red wine vinegar and butter.
* Step 4
Cover and cook slowly in an oven at 150 degrees centigrade for 1.5 - 2 hours. I often cook a casserole at the same time.
* Step 5
Once cooked the braised red cabbage will remain warm before eating. Can also be gently reheated.
