Messy Eggs, Shrimp Breakfast

I made the recipe when I wasnt sure if I wanted an omlette, poached, fried or scarmbled eggs.. This is great for a low carb breakfast and even though it looks messy it also looks gorgeous and rustic and taste great. The sweetness from the peas and shrimp and heat from the cayenne pepper are perfect to get you going in the morning x Enjoy #mycookbook

Cooking instructions

* Step 1

In a pan heat some oil of your choice and add your onions, cook for a minute or 2, add your fine beans and shrimp and cook for a further minute or 2,

* Step 2

Next crack 4 eggs in each side of the pan allowing the whites to cover the bottom of the pan like an omlette would and add your peas, cook for a minute or 2.

* Step 3

When the egg whites are nearly done cut your yolks across the top with a knife so they bleed out across the whole pan creating a bit of a mess.

* Step 4

Pop a plate over the top of the pan so the yolks start to firm up slightly, remove the plate, season and sprinkle with cayenne pepper and whilst there is still some runny to your yolks remove from the heat and place the pan on a platter and serve at the table with some vine tomatoes and rye bread soldiers if you wish.
