Carrot & bean stew
If you want your carrots to be the star of the show here use super fresh organic ones. If you don’t have these use less, cut up smaller and make the beans the dishes hero.
Cooking instructions
* Step 1
Cook the onion off for a few minutes in whichever oil you prefer to cook with on a low heat. Add carrot and book for about 10 mins without browning.
* Step 2
Add the Tom purée and spices covering all the carrots and cooking off for about 4/5 minuets.
* Step 3
Add the oregano and garlic and stir well, cover with stock, beans, tamari and vinegar.
* Step 4
Turn up the heat and allow to thicken.
* Step 5
Note: Season and use your coriander to taste
