Courgetti with roasted red pepper and smoked mackerel
A really quick and tasty knock up dish - courgetti with roasted peppers, tomato and flaked, smoked mackerel.

Cooking instructions
* Step 1
Roast a large red or yellow pepper whole in oven.
* Step 2
Whilst it's doing its thing gently cook down a chopped onion, garlic, finely chopped celery, a chopped-up tomato and a big handful of fresh basil, or dried herbs works too. Salt/pepper to taste.
* Step 3
In a pan or wok flash fry the courgette in a little olive or other safe oil, over high heat until it just starts to wilt.
* Step 4
Time to plate up! Courgetti first, topped with lovely veg mix then lastly flaked, smoked mackerel.
* Step 5
Let that sweat right down and get your courgetti prepped if you are spiralising it yourself. If not, packets are readily available and work just as well.
* Step 6
Remove your lovely squidgy roast pepper from oven, chop it up and add to the veg pan, add the juices too.
