Cod, chorizo and potato
A quick dinner using up some leftover jersey royals (a delicious seasonal potato from Jersey UK). Really quick to make, less than 30 minutes.
Cooking instructions
* Step 1
Drizzle some olive oil into a large deep frying pan, heat on a low heat.
* Step 2
Dice the onion, chop the pepper and chorizo into chunks and slice the chilli. Throw all into the pan and stir fry for 5 mins
* Step 3
Quarter the potatoes and add them to the pan, fry for a minute and add the tin of tomatoes.
* Step 4
Stir well then add the two fish fillets. Season to taste and cover for 7 minutes, turn the heat down to a simmer.
* Step 5
Serve with green veg and top with shredded fresh basil
