Avocado on toast

#tech4 This is such an amazing breakfast. This tastes wonderful on a sour dough bread, if that's not available you can use regular slice bread & toast the bread in a toaster/griller

Cooking instructions

* Step 1

For the avocado mash/guacamole cut the avocado, remove the seeds & scrape the flesh with a spoon into a mixing bowl, then add finely chopped spring onions, garlic, mix herbs, salt, pepper, lemon juice, chilli flakes & parsley and mix well using a fork.

* Step 2

Toast the bread in a bread toaster/griller, apply some butter if required.

* Step 3

Slice the cherry tomatoes into half, marinate them in balsamic vinegar, salt, pepper & oregano for 15 minutes.

* Step 4

Top the toasted bread with guacamole & marinated tomatoes & serve.
