Quinoa Roasted capsicum with Tomatoes

Cooking instructions

* Step 1

Heat oil in a pan over medium heat add onion and garlic and fry for 1 minute

* Step 2

Stir in cherry tomatoes quinoa carrot and water cover and bring to boil reduce heat to medium low and simmer for 15 minutes or until quinoa is tender stir in cheddar cheese and mix herbs season to taste with salt and pepper

* Step 3

Preheat oven to 180 c

* Step 4

Fill each capsicum half with quinoa mixture and place in baking tray place 2-3 tomato in the tray cover with foil and bake till capsicum is nicely cooked

Sprinkle mozzarella cheese over the top of the capsicum and return to the oven to bake for a further 15 minutes until tops are browned let stand 5 minutes Transfer to serving plates
