Spicy tailgate casserole
A regular start to our college football tailgate
Ingredient

Cooking instructions
* Step 1
Ahead of time roast 3 large hot Hungarian peppers with a shot of olive oil in foil. 375 until you smell the roasted sent. Remove from oven and cool. After cooling remove stems and seeds. Cut into 1 inch strips
* Step 2
Fry and break up sausage and reserve. Fry up diced Yukon potatoes in bacon fat and butter, adding in diced onion towards the end til carmelized
* Step 3
Layering in order: 1/2 cheese, pepper strips, potatoes, sausage, eggs and 1/2 cheese on top.
* Step 5
At 350 degrees cook covered for 35 minutes, then uncovered for 15 minutes
* Step 6
Top with Chipolte creama (til blended in food processor, 1/4 cup mayo, cup sour cream, 2 chipotle peppers in adobo sauce, one clove garlic and 1/2 lime juiced)
