Turkey Casserole
Cooking instructions
* Step 1
Heat a bit of olive oil in Dutch oven. Cook turkey until done. Set aside.
* Step 2
In a small bowl, combine 1/6 cup Panko, 1 tbsp parmesan, and melted butter. Season with salt.
* Step 3
In Dutch oven over medium-high, melt 3/4 tbsp butter. Add onion until slightly cooked. Add mushrooms until everything is cooked. Season with salt.
* Step 4
Add 1 tbsp flour and stir to combine. Add chicken broth, bring to a boil.
* Step 5
Reduce heat to medium-low and simmer, stirring, until thickened, about 5 minutes. Remove from heat and stir in 1/2 cup cheddar and 2 tbsp Parmesan until melted.
* Step 6
Add turkey, 1/4 cup peas, 3/4 tsp parsley, and 1/4 tsp lemon juice. Season with salt and pepper.
* Step 7
Transfer to Pyrex dish. Top with buttered breadcrumbs. Top with 3/4 tsp parsley. Freeze.
* Step 8
When prepping to eat, thaw overnight. Preheat oven to 350°F. Cook 1/2 cup pasta, add to casserole. Bake in 30 minute increments until done (160°F).
