Vegetarian Lentil Tacos

I went deep outside the box tonight. It is of coarse taco tuesday but had no fresh meat ready. I do like to have vegetarian meals several times a week so I thought let's give this a try. I used lentils and spices as my meat substitute. We ate the whole thing! The lentils with added onions gave a look and texture of ground beef. I used spices while cooking the lentils to infuse flavor into them. Then used a boxed taco kit and the flavor packet to finish it off. Healthier and delicious. You really need to try this!

Ingredient

Food ration :

4 servings

Cooking time :

30 minutes
8 ounces

dried lentils

4 cups

water

1 teaspoon

salt

1 tablespoon

smoked paprika

1 tablespoon

garlic powder

1 tablespoon

cooking oil

Cooking instructions

* Step 1

Bring water and spices to a boil

* Step 2

Rinse dried lentils then add to boiling water. Reduce heat to low and cover pot. Cook about 15- 20 minutes until lentils are tender.

* Step 3

If any water is left in cooked lentils, drain it but reserve it.

* Step 4

In a pan, add oil and diced onion and cook over medium heat.

Once translucent, about 4 minutes, add taco seasoning from taco kit. Use water reserved from cooking lentils for amount of water the taco seasoning calls for. Stir and cook until thick. Add lentils. Stir.

Heat up in a separate pan the refried beans if you want to use them.

Slice up lettuce, tomatoes.

Enjoy! The lentils are full of protein, dietary fiber and vitamins. Infusing the cooking water adds such flavor. The Habanero spice I bought and used can be purchased from Amazon or the companies website. I am not officially endorsing it But I have to say we love that spice. A little goes a long way.
