Stuffed sweet potato + Beans
Cooking instructions
* Step 1
Preheat oven to 425º. On a baking sheet, prick sweet potatoes / potatoes all over with a fork.
Bake until tender, 45 to 50 minutes.
Let cool, then split the tops open with a knife and top with a pat of butter.
* Step 2
(Optional) Prepare gravy based beans (black beans, etc) as side dish.
* Step 3
When sweet potatoes are almost done, take a pan with lots of butter and some oil. Toss in the mushrooms and chilli peppers. Add seasonings as desired. (salt, pepper, paprika, oregano, etc.)
* Step 4
Add the mushrooms in the slits of the potatoes. Top it with grated cheese and put it back into the oven for the cheese to melt.
