Cooking instructions
* Step 1
Collect all the equipment and ingredients.
* Step 2
The first step is to make the base of the sauce.
Important: STIR FREQUENTLY and use LOW fire. Be careful, is very easy to burn the butter and the flour. Cook the base for a few minutes. As you are making a white roux, do not allow the mixture to colour. This mixture will give consistency to the sauce.
Remove the pot from the heat to allow the roux to cool.
* Step 3
Return the pan to the stove and, over a low heat, gradualy mix the milk and double cream into the roux. Allow the mixture to simmer gently. Stir frequently to make sure the sauce does not burn on the bottom.
* Step 4
When you can see a difference in consistency (thicker liquid) is time to add the cheese mozzarella and blue cheese.
Remember to mix constantly.
You can try the recipe with other cheese like cheddar, parmigiano...
* Step 5
Stir the pot until you get the consistency you want.
Check the sauce and season to taste with salt and black pepper.
